Savor this flavorful arroz con pollo, a traditional dish from Latin America and Spain combining seasoned rice with tender chicken for a satisfying meal.
Ingredients:
  • Chicken
  • 3 tablespoons extra virgin olive oil
  • 1 broiler-fryer chicken, about 2 1/2-3 pounds, cut into serving pieces, or 2 1/2 to 3 pounds chicken thighs or breasts, bone-in, with skin on, rinsed and patted dry
  • 1/2 cup flour for dredging
  • Kosher salt
  • Freshly ground black pepper
  • Paprika
  • Rice
  • 2 tablespoons extra virgin olive oil (can use up to 1/4 cup)
  • 1 medium yellow onion, chopped
  • 1 garlic clove, minced
  • 2 cups medium or long-grain white rice
  • 3 cups chicken stock (see note above about the ratio of liquid to rice)
  • 1 heaping tablespoon tomato paste or 1 cup diced fresh or cooked tomatoes, strained
  • Pinch of oregano
  • 1 teaspoon kosher salt
Instructions:
  • To brown the chicken, warm 3 tablespoons of olive oil in a large skillet over medium-high heat with a lid. In a wide bowl, combine flour, salt, pepper, and paprika. Lightly coat the chicken pieces with the flour mixture and place them in the skillet. Cook for a few minutes on each side until browned. Remove the chicken using a slotted spoon and set aside.
  • Toast the rice: Add uncooked rice to the pan with olive oil. Stir occasionally to evenly coat the rice. Add more oil if needed. Allow the rice to brown without over-stirring. Stir occasionally to ensure even browning.
  • Sauté the onion and garlic in the pan with the rice, stirring often, until the onions are softened, about 4 minutes.
  • Arrange the chicken pieces, skin side up, over the rice.
  • Combine the stock, tomato, salt, and oregano in a bowl, then pour over the rice and chicken.
  • Simmer with a lid: Bring to a gentle simmer, lower the heat, cover, and cook for 20 to 25 minutes, adjusting based on the rice type and package instructions, until rice and chicken are cooked through. Fluff the rice with a fork and optionally garnish with peas. Season with salt and pepper to taste. Enjoy and leave us a rating if you liked it!
