Classic potato salad with hard boiled eggs and sweet pickles, just 5 ingredients.
Ingredients:
  • 5 pounds potatoes, peeled and chopped
  • 10 eggs
  • 1 large onion, chopped
  • 1 (24 ounce) jar sweet pickles, drained and chopped
  • 2 cups mayonnaise
Instructions:
  • Boil potatoes in a large pan of water over medium-low heat until tender, approximately 12 minutes. Drain and chill in the refrigerator.
  • To make hard-boiled eggs, gently simmer the eggs in cold water until boiling. Turn off the heat, cover, and let the eggs sit in the hot water for 15 minutes. Cool the eggs under cold running water, peel, chop, and add to a salad bowl.
  • Combine diced onions, sweet pickles, and creamy mayonnaise with boiled eggs. Allow the mixture to chill in the fridge for at least 30 minutes to enhance the flavors. Fold in the chilled, diced potatoes and refrigerate for an additional 30 minutes. Serve chilled.
