Flavorful Greek rice infused with zesty lemon, aromatic bay leaves, and savory chicken broth. A simple and speedy side dish.
Ingredients:
  • 0.5 stick butter
  • 2 cups converted long-grain white rice
  • 1 (32 fluid ounce) container chicken broth
  • 0.5 lemon, juiced
  • 1 teaspoon salt
  • 3 bay leaves
Instructions:
  • Gently melt butter in a pot over low heat, then add rice and stir until coated in butter. Simmer on low heat, stirring occasionally, until rice is toasted but not burnt, for about 10 minutes.
  • Add chicken broth, lemon juice, salt, and bay leaves to the rice mixture. Bring to a vigorous boil for 5 minutes, then reduce heat, cover, and simmer for 20 minutes.
  • Cover and let it sit off the heat for 10 minutes, then fluff with a fork before serving.
