My Mom's Swiss Steak

One-pot, fail-proof recipe loved by all, even kids! Easily doubled or tripled with lower heat for browning multiples.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2 (1/2 pound) beef sirloin tip steaks
  • salt and pepper to taste
  • 1 cup (1 small) chopped onion
  • 1 (16 ounce) can diced tomatoes
  • 2 cups sliced fresh mushrooms
  • 1 stalk celery, chopped
  • 0.5 cup chopped green bell pepper
  • 1.5 teaspoons dried oregano
  • 1 bay leaf
  • 1 cup water
  • 2 tablespoons cornstarch
Instructions:
  • In a large Dutch oven over medium-high heat, heat oil. Brown steaks quickly on each side. Remove and set aside. Add onion to pot and cook until wilted, about 3 minutes. Return steaks to pot and add tomatoes, mushrooms, celery, and green pepper. Season with oregano and add bay leaf.
  • Cover the pot and simmer the meat over gentle heat for 1 1/2 hours until it's tender. If desired, transfer the meat to a plate. Mix cornstarch and water, then add to the pan juices. Let the mixture simmer for 2 minutes to thicken. Return the meat to the pot.
