Irresistible pumpkin cornbread muffins for a cozy fall breakfast.
Ingredients:
  • cooking spray
  • 4 cups cornbread mix (such as Marie Callender's®)
  • 1 tablespoon baking powder
  • 0.75 teaspoon pumpkin pie spice
  • 1 (15 ounce) can pumpkin puree
  • 1.5 cups water
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and give 21 muffin cups a quick spritz with cooking spray.
  • Combine cornbread mix, baking powder, and pumpkin pie spice in a large bowl. Gently fold in pumpkin puree and water until just-combined. Divide batter evenly among muffin cups.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
