Whip up a delicious chicken burrito bowl with black beans, corn, and rice for a satisfying weeknight dinner!
Ingredients:
  • 2 skinless, boneless chicken breasts
  • 0.5 teaspoon garlic powder, or to taste
  • 1 (15.25 ounce) can white corn kernels, drained
  • 1 (15 ounce) can black beans, drained
  • 1.5 cups cooked long-grain white rice
  • 0.5 cup shredded Monterey Jack cheese
  • 0.75 cup chopped lettuce
  • 0.33333334326744 (8 ounce) jar salsa
  • 0.5 cup sour cream
Instructions:
  • Prepare the grill by heating it to medium heat and giving the grate a light coating of oil.
  • Sprinkle chicken breasts generously with garlic powder, salt, and black pepper for a burst of flavorful seasoning.
  • Grill chicken on each side for about 6 minutes until no longer pink in the center and cooked through. Use an instant-read thermometer to ensure the internal temperature reaches 165°F (74°C). Slice the chicken into strips or bite-sized pieces.
  • Gently heat the corn and black beans in individual saucepans, covered, on medium-low heat for about 5 minutes until warmed through.
  • On 2 serving plates, create a delicious base with cooked rice, corn, black beans, and chicken. Generously layer with Monterey Jack cheese, fresh lettuce, zesty salsa, and a dollop of tangy sour cream.
