Nan's peach clafoutis

Put a twist on classic clafoutis with tinned peaches instead of cherries.
Ingredients:
  • 3 large eggs
  • 3 tablespoons plain flour
  • 1 pinch of salt
  • 5 tablespoons golden caster sugar
  • 450 ml milk
  • 1 whole nutmeg for grating
  • 50 g butter
  • 400 g tinned peach halves in juice
  • vanilla ice cream to serve
Instructions:
  • Preheat the oven to 220°C/425°F/gas 7. Beat eggs in a bowl. Mix in flour, salt, and 3 tablespoons of caster sugar. Set aside. Warm milk in a saucepan until lukewarm, then blend into the egg mixture. Grate in ¼ of nutmeg. Grease an ovenproof dish with butter. Arrange drained peaches in the dish, pour batter over them, and dot with butter. Bake for 25-30 minutes until set with a slight wobble. Sprinkle with remaining sugar and serve with a scoop of ice cream on top. Enjoy this delectable treat!
