Microwaved acorn squash, broiled with butter and brown sugar for a caramelized finish.
Ingredients:
  • 1 acorn squash, halved and seeded
  • salt and pepper to taste
  • 4 tablespoons butter, divided
  • 4 tablespoons brown sugar
Instructions:
  • Pour enough water in a microwave-safe casserole dish to reach 1 1/2 inches in depth. Place the squash halves, cut side down, in the water, and lightly pierce the skin with a fork a few times. Microwave on high for 15 to 20 minutes, then drain.
  • Season each half with a pinch of salt and a dash of pepper. Add a generous 2 tablespoons each of butter and brown sugar to each half.
  • Broil for 5 minutes until the butter is melted. Combine the melted butter and sugar with the flesh, then serve.
