Acorn squash stuffed with buttery cinnamon-sugar cracker filling, perfect for festive fall feasts.
Ingredients:
  • 1 cup butter
  • 1 tablespoon ground cinnamon
  • 1 cup crushed saltine crackers
  • water, as needed
  • 1 acorn squash, halved and seeded
Instructions:
  • Heat your oven to 350°F (175°C).
  • In a saucepan over medium-low heat, melt butter until smooth. Stir in cinnamon and brown sugar, then mix in crushed saltine crackers until coated. Remove from heat.
  • Fill a baking dish with 1 inch of water. Place the acorn squash in the dish with the rounded sides facing down. Stuff the cavity of the squash with the saltine cracker mixture.
  • Roast in the preheated oven until the squash is fork-tender, around 45 minutes.
