Family-favorite peach parfait pie, a refreshing summer treat with a rich history.
Ingredients:
  • 1 cup rolled oats
  • 0.5 cup slivered almonds
  • 0.5 cup brown sugar
  • 0.33333334326744 cup melted unsalted butter
  • 1 (.25 ounce) package unflavored gelatin (such as Knox®)
  • 0.75 cup orange juice
  • 2 tablespoons orange juice
  • 1 pint vanilla ice cream
  • 2 cups diced fresh peaches
  • 0.25 teaspoon almond extract
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and spread oats evenly on a baking sheet.
  • Toast in the preheated oven for 5 minutes, then combine almonds with oats and toast for an additional 5 minutes. Transfer to a bowl after removing from the oven.
  • Combine the luscious brown sugar and rich melted butter with the oat mixture, creating a delectable base. Press this flavorful mixture onto the bottom and sides of a 9-inch pie pan, then chill as you whip up the filling.
  • In a saucepan, heat orange juice until boiling, then remove from heat. Gradually sprinkle gelatin into the juice while whisking until fully dissolved. Stir in ice cream until melted and mixture is smooth. Gently fold in peaches and almond extract. Pour the mixture into the chilled crust and refrigerate for a minimum of 3 hours before serving.
