Delicious holiday favorite: Grandmother's cheesy cornbread squash casserole.
Ingredients:
  • cooking spray with flour
  • 2 cups chopped yellow squash
  • 3 cups crumbled prepared cornbread
  • 0.5 (23 ounce) can condensed cream of chicken soup
  • 1 cup shredded Cheddar cheese, divided
  • 0.5 cup chopped onion
  • 0.5 cup chopped celery
  • 0.5 cup margarine, softened
  • 1 tablespoon white sugar
  • 1 teaspoon dried sage
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a medium baking dish with cooking spray.
  • Add squash to a pot and cover with water. Bring to a boil and cook until tender, approximately 5 minutes.
  • After draining the squash, combine it in a bowl with crumbled cornbread, condensed soup, 1/2 cup of Cheddar, onion, celery, margarine, egg, sugar, sage, salt, and pepper, stirring until fully mixed. Then, transfer the mixture to the baking dish.
  • After baking for 45 minutes in the preheated oven, sprinkle the remaining Cheddar on top and bake for an additional 15 minutes until the cheese is melted and bubbly.
