Grandma's fragrant butter pecan Bundt cake: rich batter with toasted butter pecans.
Ingredients:
  • 1.3333333730698 cups coarsely chopped pecans
  • 1.25 cups butter, divided
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 cups white sugar
  • 4 eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then mix pecans and 1/4 cup of butter in a baking pan.
  • Toast pecans in the preheated oven for 20 minutes until golden and fragrant. Allow to cool.
  • In a bowl, mix the flour, baking powder, and salt together.
  • In a large bowl, cream together the remaining 1 cup of butter and sugar using an electric mixer until creamy. Add eggs one at a time. Alternate mixing in the flour mixture with milk and vanilla extract until smooth. Lastly, fold in the pecans.
  • Preheat oven to 325 degrees F (165 degrees C) and generously grease a fluted tube pan like a Bundt®.
  • Gently transfer the batter into the pan that has been prepared.
  • Bake in the oven at the set temperature until a toothpick comes out clean when inserted in the center, approximately 1 hour.
