Traditional Newfoundland tea biscuits: light, delicious, perfect with tea.
Ingredients:
  • 4 cups all-purpose flour
  • 5 teaspoons baking powder
  • 0.5 cup raisins
  • 1 cup milk
  • 3 eggs
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 1 pinch salt
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease 2 baking sheets.
  • In a bowl, whisk together flour and baking powder, then stir in the raisins. In another bowl, whisk together the milk and eggs.
  • In a bowl, use an electric mixer to beat together the butter, sugar, and salt until light and fluffy, which should take about 1 minute. Then, mix in the egg mixture until combined. Add the flour mixture and stir until the dough is just mixed.
  • Transfer the dough onto a lightly floured surface, gently flatten to about 1-inch thickness, then use a biscuit cutter or juice glass to cut out biscuits and place them on the baking sheets.
  • Bake until beautifully golden, about 10 minutes in the preheated oven.
