Easy and convenient dish perfect for busy evenings with kids.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, halved, finely chopped
  • 175g lup cheong (Chinese pork sausages), thinly sliced diagonally
  • 2 middle bacon rashers, trimmed, chopped
  • 500.00 ml frozen peas, corn and capsicum
  • 800.00 gm cooked white long-grain rice (see note)
  • 40.00 ml kecap manis
Instructions:
  • Heat a wok over high heat, add 2 teaspoons of oil, swirl to coat. Stir in onion and garlic, cook for 2 to 3 minutes until onion softens. Add sausage and bacon, stir-fry for 3 to 4 minutes until bacon is crisp.
  • Toss in fresh vegetables and stir-fry until they are just tender. Add in the rice and kecap manis, stir-fry until everything is heated through.
  • In a frying pan over medium heat, heat the remaining oil. Crack the eggs into the pan and cook for 2 minutes until whites are set and yolks are still soft. Spoon rice mixture into bowls, top with the egg, and serve.
