Whip up a tasty Indonesian fried rice in under 30 minutes with this simple recipe.
Ingredients:
18.40 gm vegetable oil
2chicken thigh fillets, trimmed, cut into 2cm pieces
1brown onion, halved, thinly sliced
2rashersrindless shortcut bacon, chopped
2 small carrots, finely chopped
800.00 gm cooked white long-grain rice (see note)
300g peeled cookedprawns
1 small red capsicum, finely chopped
125.00 ml frozen peas
40.00 ml kecap manis
Instructions:
Heat a wok on medium heat, then add 2 teaspoons of oil and swirl to coat. Add the egg and swirl to evenly coat the base. Cook for 1 minute, then transfer to a cutting board, roll up, and cut into thin strips.
Turn up the heat and drizzle in the remaining oil. Toss in the chicken and stir-fry for 2 to 3 minutes until just cooked through. Transfer the chicken to a plate. Add onion, garlic, bacon, and carrot to the wok and stir-fry for another 2 to 3 minutes until the onion has softened.
Combine rice, prawns, capsicum, peas, and kecap manis in the pan. Stir-fry for a minute. Add chicken and most of the egg. Stir-fry for 3 minutes until heated. Plate the dish and garnish with the remaining egg. Serve hot.
