Indulge in homemade cashew candy, a delectable brittle alternative for a melt-in-your-mouth treat!
Ingredients:
  • 1 cup unsalted butter
  • 1.25 cups white sugar
  • 0.25 teaspoon salt
  • 1 tablespoon light corn syrup
  • 10 ounces cashews
Instructions:
  • Coat a large baking sheet generously with butter or grease.
  • In a saucepan over medium heat, melt butter with sugar, salt, and corn syrup. Add cashews and raise heat to high. Cook until the mixture reaches 300 to 310 degrees F (149 to 154 degrees C) on a candy thermometer or forms hard, brittle threads when dropped into cold water. Stir occasionally to prevent cashews from burning.
  • Spread the mixture onto the lined baking sheet. Allow it to cool for approximately 10 minutes before breaking it into pieces.
