Vegan strawberry muffins with applesauce, walnuts, and flaxseed - a delicious way to enjoy your summer harvest!
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups vegan brown sugar
  • 0.5 cup flaxseed meal
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 2 cups fresh strawberry puree
  • 1 cup applesauce
  • 0.75 cup avocado oil
Instructions:
  • Preheat the oven to 350 degrees F and prepare two 12-cup muffin pans with baking cups.
  • In a large bowl, mix together flour, brown sugar, flaxseed meal, baking soda, cinnamon, and salt until well combined.
  • In a separate bowl, mix together strawberries, strawberry puree, applesauce, and oil. Combine with the flour mixture, stirring until everything is moistened. Gently fold in the walnuts.
  • Scoop batter into the muffin cups using an ice cream scoop.
  • Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow muffins to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
