Indulgent port wine infused cookie with gooey melted chocolate and peanut butter chips.
Ingredients:
  • 1 cup margarine
  • 2 eggs, separated
  • 1 tablespoon vanilla extract
  • 0.25 cup port wine
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup peanut butter chips
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare the cookie sheets by greasing them.
  • 1. In a medium bowl, blend the margarine and white sugar until smooth. Add the egg yolks, vanilla, and port wine, and mix well. 2. Combine the flour and salt, then gently fold into the creamy mixture. 3. Shape the dough into walnut-sized balls. 4. Dip each ball into the leftover egg whites. 5. Arrange cookies on prepared baking sheets, spacing them 2 inches apart.
  • Bake in a preheated oven for 10 to 12 minutes. Take out the cookies, press 4 or 5 chocolate and/or peanut butter chips into each one, then bake for an additional 2 minutes to melt the chips. Let them cool on wire racks after removing from the baking sheets.
