Utilize leftover pasta to create a delicious Italian sausage and egg dish, perfect for Easter or any occasion.
Ingredients:
  • 2.5 tablespoons olive oil, divided
  • 0.25 pound elbow macaroni
  • 0.25 pound ziti pasta
  • 0.25 pound farfalle (bow tie) pasta
  • 0.25 pound radiatore pasta
  • 1 pound sweet Italian sausage links, cut into 1/2- inch slices
  • 12 jumbo eggs, or more if needed
  • 0.5 cup shredded Pecorino Romano cheese, or more if needed
  • 0.25 teaspoon freshly ground black pepper, or more to taste
  • 2 tablespoons olive oil, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Line a large baking sheet with foil. Grease the 2-quart and 1 1/2-quart round glass baking dishes with 3/4 teaspoon olive oil each, then drizzle 1 tablespoon of olive oil into the bottom of each dish.
  • 1. Bring a large pot of lightly salted water to a boil. Add a medley of macaroni, ziti, farfalle, and radiatore pasta. Cook until al dente, about 8 to 10 minutes. Drain well.
  • Lay out sausage slices neatly on a baking sheet lined with foil.
  • Roast sausage in the oven until golden and crispy, for 30 to 45 minutes. Reduce oven temperature to 325 degrees F (165 degrees C).
  • In a large bowl, use an electric mixer to beat eggs until foamy. Add Pecorino-Romano cheese, salt, and black pepper; continue to beat on highest speed until well blended, about 2 to 3 minutes. Gently stir in cooked pasta until it looks like it's floating in the creamy mixture. Add more beaten eggs and cheese if needed to achieve desired consistency.
  • Spoon the egg-pasta mixture into each casserole, alternating with layers of sausage until all the sausage is used. Top each casserole with the remaining pasta mixture and drizzle with 1 tablespoon of olive oil. Ensure some pasta pieces are sticking out of the mixture.
  • Bake in the oven at 325 degrees F (160 degrees C) until casseroles are set in the center, about 1 hour. Increase oven temperature to 350 degrees F (175 degrees C) and bake for an additional 1 to 1 1/2 hours until the tops are browned and crispy.
