"Navratan curry - a delightful mix of nine flavorful veggies, customize to your liking!"
Ingredients:
20.00 ml ghee or peanut oil
1onion, sliced
115.50 gm korma curry paste
100g unsalted cashews, ground
1 tsp ground chilli powder
446.25 gm vegetable liquid stock
400g potatoes, peeled, cut into 2cm pieces
800g vegetables, cut into 2cm pieces
125.00 ml thick natural yoghurt
126.25 gm cream
naan bread, to serve
Instructions:
In a large saucepan over medium heat, heat ghee or oil until shimmering. Add onion and sauté until beautifully browned, about 3 to 4 minutes.
Sauté curry paste, cashews, and chilli for 1 minute. Pour in stock and add potatoes. Bring to a boil, then reduce heat and simmer covered for 15 minutes.
Toss in vegetables. Mix together yoghurt and cream. Gently fold into curry. Simmer with lid on for 10 minutes or until veggies are soft. Enjoy with naan bread.
