"Navratan curry - a delightful mix of nine flavorful veggies, customize to your liking!"
Ingredients:
  • 20.00 ml ghee or peanut oil
  • 1 onion, sliced
  • 115.50 gm korma curry paste
  • 100g unsalted cashews, ground
  • 1 tsp ground chilli powder
  • 446.25 gm vegetable liquid stock
  • 400g potatoes, peeled, cut into 2cm pieces
  • 800g vegetables, cut into 2cm pieces
  • 125.00 ml thick natural yoghurt
  • 126.25 gm cream
  • naan bread, to serve
Instructions:
  • In a large saucepan over medium heat, heat ghee or oil until shimmering. Add onion and sauté until beautifully browned, about 3 to 4 minutes.
  • Sauté curry paste, cashews, and chilli for 1 minute. Pour in stock and add potatoes. Bring to a boil, then reduce heat and simmer covered for 15 minutes.
  • Toss in vegetables. Mix together yoghurt and cream. Gently fold into curry. Simmer with lid on for 10 minutes or until veggies are soft. Enjoy with naan bread.
