Indulgent sour cream filled cookies, perfect with tea or coffee - a delightful Persian treat.
Ingredients:
  • 1 cup sour cream, at room temperature
  • 2 teaspoons white sugar
  • 1 (.25 ounce) package active dry yeast
  • 1 egg
  • 1 tablespoon white vinegar
  • 1 tablespoon vegetable oil
  • 3 cups all-purpose flour
  • 0.5 cup butter
  • 1 pound butter, melted
  • 2.5 cups white sugar
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 egg whites
  • 2 egg yolks
  • 1 teaspoon plain yogurt
Instructions:
  • Combine 1 cup of sour cream, 2 teaspoons of sugar, and yeast in a bowl. Allow it to rest for 5 minutes. Stir in egg, vinegar, and oil.
  • In a large bowl, add 3 cups of flour. Incorporate 1/2 cup of butter into the flour until it resembles coarse meal. Mix in the sour cream mixture until the dough forms.
  • Transfer dough to a floured surface and knead for 10 minutes until smooth and slightly tacky. Divide dough into 4 pieces and wrap each in plastic wrap. Chill in the refrigerator for at least 2 hours or overnight until firm.
  • Preheat the oven to 350°F (175°C).
  • In a very large bowl, combine melted butter, 2 1/2 cups sugar, and vanilla extract to create the filling. Next, mix in 4 cups of flour, followed by beating in the egg whites.
  • On a lightly floured surface, roll out the dough into an 8x12-inch rectangle. Sprinkle 1/4 of the filling mixture evenly, leaving a 1/2-inch border along the long sides. Cover with plastic wrap and gently flatten with a rolling pin. Roll the dough tightly into a log, beginning from one of the long sides.
  • Cut the roll into 2-inch angled pieces, then place them on a rimmed baking sheet. Gently press down on the tops to slightly flatten. Repeat the process with the remaining 3 rolls and filling.
  • Combine the egg yolks and yogurt to create a luscious glaze, then delicately brush it over the dough pieces.
  • Place in the oven until golden brown, this will take around 20 to 30 minutes. Allow it to cool for about 15 minutes before serving.
