Striped Neapolitan Fridge Cookie - Chocolate, Pink, and White swirls inspired by the iconic ice cream.
Ingredients:
  • 1 cup butter, softened
  • 1.5 cups white sugar
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon almond extract
  • 5 drops red food coloring
  • 1 (1 ounce) square unsweetened chocolate, melted
  • 0.5 cup chopped walnuts
Instructions:
  • In a medium bowl, whip together butter and sugar until creamy. Mix in eggs and vanilla. Add flour, baking powder, and salt; combine with the creamy mixture. Divide dough into three portions. Flavor one with almond extract and red food coloring, mix chocolate into another, and stir walnuts into the third.
  • Prepare the loaf pan by lining it with waxed paper. Then, evenly spread the almond dough in the pan. Next, layer the walnut dough on top of the almond layer, followed by the chocolate dough. Cover the layered dough with waxed paper and refrigerate until firm, approximately 4 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Remove the chilled dough from the pan by flipping it over and peeling off the waxed paper. Use a sharp knife to cut the dough in half lengthwise, then slice each half crosswise into 1/4 inch slices. Arrange the slices on a cookie sheet, making sure to leave about an inch of space between each one.
  • Bake in the preheated oven for 10 to 12 minutes until lightly browned, then transfer to wire racks to cool.
