Neenish truffles recipe

Transform classic Neenish tarts into adorable truffles that are both fun to make and delicious to eat. Inspired by the traditional baked treat, these truffles feature a double-coloured chocolate coating and a delectable filling. Set in just 30 minutes, they offer a tasty twist on a timeless recipe.
Ingredients:
  • 250g pkt shortbread cream biscuits
  • 60ml (1/4 cup) sweetened condensed milk
  • 105.60 gm strawberry jam
  • 290g pkt white choc melts
  • Pink food colouring, to tint (see notes)
  • 125g dark choc melts
Instructions:
  • Pulse the biscuits in a food processor until coarsely crushed. Mix in the condensed milk and 2 tbsp jam until just combined with a bit of texture remaining.
  • Scoop mixture into a bowl. Roll level tablespoons into compact balls. Use a skewer to gently create a hole in each ball, widening it to about 3-5mm.
  • Transfer the remaining 2 tbsp of jam into a piping bag or small sealable plastic bag. Cut off the end to create a small hole. Fill each hole with a small amount of jam. Press the ball to seal the hole (it's okay if the jam oozes slightly).
  • Prepare a baking tray by lining it with parchment paper. In a microwave-safe bowl, heat white chocolate melts in the microwave on medium heat, stirring every minute with a metal spoon until melted and smooth (2-3 minutes). Add a few drops of coloring to turn the chocolate pink. Dip each ball into the pink chocolate using a fork, then lift it out and let excess chocolate drip off by tapping the fork on the bowl's edge. Place coated balls on the lined tray using a skewer or another fork to slide them off. Repeat with the rest of the balls and pink chocolate. Allow them to set for 15 minutes before serving.
  • Put the dark chocolate melts in a small microwave-safe bowl. Microwave on Medium, stirring every minute with a metal spoon, until melted and smooth (about 2-3 minutes). Carefully skewer each truffle on one side, making sure not to crack the chocolate. Dip the truffles halfway into the dark chocolate, then place them back on the tray and remove the skewer. Repeat with the rest of the truffles. Let them sit for 15 minutes to set.
