Negroni roast chicken recipe

Elevate your Christmas feast with a tantalizing twist on roast chicken using the alluring flavors of a Negroni cocktail - Campari, orange, and honey - transforming it into a stunning centerpiece dish.
Ingredients:
  • 1 orange
  • 5 fresh thyme sprigs
  • 5 whole garlic cloves, bruised
  • 1.9kg free range chicken
  • 1 red onion, peeled, cut into thin wedges
  • 125ml (1/2 cup) Campari Negroni
  • 125ml (1/2 cup) fresh orange juice
  • 60ml (1/4 cup) honey
Instructions:
  • Preheat the oven to 200°C/180°C fan forced. Slice the orange neatly into rounds and set aside 3 slices. Stuff the chicken cavity with thyme sprigs, 3 garlic cloves, and 1 orange slice. Tie the chicken with kitchen string, then drizzle with 2 tsp oil and season generously.
  • In a flameproof casserole dish over medium heat, heat the remaining 1 tbs of oil. Place the chicken breast side-down and cook for 5 minutes until the skin is golden. Turn the chicken onto one side and cook for 2 minutes until golden. Repeat on the remaining 2 sides for 4 minutes each until golden. Then, transfer the chicken to a plate carefully.
  • In the pan, add onion, remaining garlic, and orange slices. Cook for 2-3 minutes until slightly softened. Remove pan from heat, place chicken breast side up. In a jug, mix Campari Negroni, juice, and honey, then pour over the chicken. Top with the 3 reserved orange slices and drizzle with remaining oil. Bake for 1 hour 10-15 minutes, basting 4 times until chicken is cooked and golden. Let it rest for 15 minutes, then carve and serve with pan juices.
