Savory pork patties blended with rice and spices, delicious both hot off the grill or as a cold snack.
Ingredients:
  • 32.00 gm jasmine rice
  • 500g pork mince
  • 3 green shallots, ends trimmed, finely chopped
  • 2 garlic cloves, crushed
  • 24.40 gm fish sauce
  • 1 tsp freshly ground black pepper
  • 5.00 gm caster sugar
  • Sa lach dia (pickled vegetable salad), to serve, see related recipes
  • Nuoc leo (peanut sauce) and nuoc cham (dipping sauce), to serve, see related recipes
Instructions:
  • Toast the rice in a small frying pan over medium heat until golden brown, stirring occasionally for 4-5 minutes. Let it cool for 5 minutes, then grind it into a fine powder using a pestle and mortar.
  • Mix together the rice, pork, shallot, garlic, fish sauce, pepper, and sugar in a spacious bowl. Separate the mixture into 24 equal portions. Shape each portion into a patty using damp hands. Skewer the patties evenly. Chill in the fridge for 30 minutes to enhance the flavors.
  • Preheat the barbecue grill or chargrill over medium heat. Cook the skewers, turning occasionally, for 10-12 minutes until they are fully cooked.
  • Serve the dish hot or at room temperature on a serving plate with sa lach dia (pickled vegetable salad), nuoc leo (peanut sauce), and nuoc cham (dipping sauce).
