Nettle Soup

Delicious, nourishing nettle soup, perfect for spring markets. Rich dark green goodness.
Ingredients:
  • 1 pound stinging nettles
  • 2 teaspoons salt
  • 1 tablespoon extra virgin olive oil
  • 1 white onion, diced
  • 0.25 cup basmati rice
  • 4 cups chicken broth
  • salt and pepper to taste
Instructions:
  • 1. In a large pot, bring water and 2 teaspoons of salt to a boil. Add the stinging nettles and cook for 1 to 2 minutes until softened to remove their sting. Drain in a colander, rinse with cold water, trim tough stems, and chop coarsely.
  • Start by gently heating olive oil in a saucepan, then add the onion and cook until softened and translucent, about 5 minutes. Add rice, chicken broth, and chopped nettles, bring to a boil, then simmer covered on medium-low heat until rice is tender, about 15 minutes. Finally, blend the soup using an immersion blender, and season with salt and pepper to taste.
