Elevate meatloaf with New Mexico green chiles for a flavorful twist - enjoy for dinner and as tasty sandwiches for lunch the next day.
Ingredients:
  • 1.5 pounds hamburger
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6 ounce) can diced green chiles
  • 0.75 cup chopped onion
  • 0.5 cup milk, or as needed
  • 15 crushed crackers
  • 0.5 teaspoon salt, or more to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a loaf pan.
  • Combine ground beef, diced tomatoes, green chiles, onion, milk, eggs, crushed crackers, salt, and pepper in a bowl. Then, transfer the mixture to the greased loaf pan.
  • Roast in the oven until the center is no longer pink, for approximately 1 hour and 10 minutes, or until an instant-read thermometer reads at least 160°F (70°C).
  • Allow the dish to cool in the pan for 10 minutes before moving to a serving plate.
