Lucky New Year's Day fried pork and cabbage with caraway seeds - a flavorful and easy traditional dinner for a lucky start to the year!
Ingredients:
  • 1 pound boneless pork, cut into thin bite-size pieces
  • 1 tablespoon butter
  • 0.5 head cabbage, shredded
  • 1 onion, diced
  • 0.5 teaspoon caraway seeds
  • salt and ground black pepper to taste
  • 1.5 cups chicken broth, divided
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
Instructions:
  • In a skillet over medium heat, sizzle pork in vegetable oil until beautifully browned, approximately 10 minutes. Move pork to a bowl.
  • In the same skillet, melt butter over medium heat. Add cabbage and cook until wilted, about 5 minutes. Stir in onion and continue cooking until onion is translucent, about 5 more minutes, stirring occasionally.
  • Season vegetables with fragrant caraway seeds, salt, and bold black pepper. Add a splash of 1/2 cup rich chicken broth to the skillet. Turn up the heat to medium-high and simmer until the broth is almost gone; then pour in the remaining 1 cup of broth.
  • Add the pork back to the skillet, along with red and green bell peppers. Cover and cook for about 10 minutes until the peppers begin to soften.
