Indulge in Chef John's rich and dense New York cheesecake, infused with orange, lemon, and vanilla flavors for a decadent treat.
Ingredients:
  • 18 graham crackers, crushed
  • 3 tablespoons melted butter
  • 1 cup sour cream
  • 0.25 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • 4 (8 ounce) packages cream cheese
  • 1.5 cups white sugar
  • 0.66666668653488 cup milk
  • 4 eggs
  • 1 teaspoon finely grated lemon zest
  • 1 teaspoon finely grated orange zest
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  • Combine graham cracker crumbs and melted butter in a bowl, thoroughly mixing until evenly coated. Firmly press the mixture into the base and partially up the sides of the springform pan.
  • Combine sour cream, flour, and vanilla extract in a bowl and blend until smooth; set aside.
  • Blend cream cheese and sugar with a wooden spoon until smooth, about 3 to 5 minutes. Mix in milk until combined. Then, add eggs one by one, stirring thoroughly. Fold in lemon zest, orange zest, and sour cream mixture until just blended. Pour into the springform pan.
  • Bake in the preheated oven for about 1 hour, until the edges are nicely puffed and the surface is firm except for a slightly jiggly center when gently shaken.
  • After baking the cheesecake, allow it to cool in the turned-off oven for 3 to 4 hours to prevent cracking on the surface.
