Indulgent cheesecake with spiced apple topping - a must-have dessert for fall and holiday gatherings.
Ingredients:
  • 1.5 cups graham cracker crumbs
  • 0.25 cup melted butter
  • 2 tablespoons packed brown sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup packed brown sugar
  • 1 cup sour cream
  • 4 eggs
  • 4 cups apples (about 3) - peeled, cored, and chopped
  • 0.5 cup packed brown sugar
  • 0.75 cup chopped pecans
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and line a 9x13 inch baking dish with aluminum foil, leaving extra foil hanging over the edges.
  • Combine the graham cracker crumbs, butter, and 2 tablespoons of brown sugar in a bowl and mix until well combined. Press the mixture evenly onto the bottom of the baking dish.
  • In a mixing bowl, combine cream cheese, 1 cup brown sugar, and vanilla; mix until smooth. Add sour cream, then eggs one at a time on low speed until just combined. Pour over the crust.
  • Combine the apples, 1/2 cup brown sugar, pecans, and cinnamon in a bowl, tossing until well mixed.
  • Bake in a piping hot oven until the center is nearly set, around 55 minutes. Allow to cool, then chill in the refrigerator for 4 hours or overnight.
  • Let the cheesecake rest at room temperature for 30 minutes, lift it out of the dish using the foil handles, place it on a cutting board or serving plate, discard the foil, and slice into 16 squares.
