FODMAP-friendly bean, potato, tomato, and tuna salad - a winning combo! Perfect for Low FODMAP diet.
Ingredients:
  • 12 (about 650g) baby coliban (chat) potatoes
  • 320g green beans, topped
  • 60ml (1/4 cup) extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 5.90 gm Dijon mustard
  • Pinch of sugar
  • 3 (about 250g each) tuna steaks
  • 12 baby egg tomatoes, halved
  • 100g (2/3 cup) kalamata olives
  • 250.00 ml fresh continental parsley leaves
Instructions:
  • Boil potatoes in a saucepan for 10 minutes until just tender, then transfer to a chopping board and halve. In the same pot, cook beans for 2-3 minutes until bright green and crisp-tender. Refresh in cold water and drain.
  • Place eggs in a saucepan of cold water. Bring to a boil over high heat, then reduce to medium heat and gently boil, uncovered, stirring occasionally, for 6-7 minutes. Drain, cool under cold running water, peel, and quarter.
  • Combine oil, vinegar, mustard, and sugar in a jug and whisk together until well blended. Season with salt and pepper to taste.
  • Preheat a frying pan over medium-high heat. Cook tuna for 2-3 minutes on each side until it reaches your desired doneness. Place on a plate and let it rest for 5 minutes before flaking into large pieces.
  • Evenly distribute the potato, beans, egg, tuna, tomato, olives, and parsley into serving bowls. Drizzle with the dressing and season with salt and pepper before serving.
