Explore this robust international veggie salad, satisfying and full of flavor!
Ingredients:
650g potato
400g baby green beans, trimmed
425g can tuna in oil, drained, flaked
250g grape tomatoes, halved
187.50 ml black olives
2baby cos lettuce hearts, leaves separated, washed
4hard-boiled Free Range Eggs, peeled, quartered
3anchovy fillets in oil, drained, halved lengthways (optional)
75.08 gm Classic Olive Oil
82.50 ml red wine vinegar
23.40 gm dijon mustard
Instructions:
Create the dressing by combining oil, vinegar, and mustard in a jug. Season with salt and pepper to taste.
Boil potatoes until just tender, then transfer to a large bowl. In the same water, blanch beans until bright green and tender. Drain, cool under cold water, then add to the bowl with potatoes.
Combine the tuna, tomato, olives, lettuce, egg, and anchovies (if using) with the potato mixture. Drizzle with red wine dressing, gently toss to mix, and season with salt and pepper before serving.
