Creamy zucchini soup, a tasty way to enjoy an abundance of zucchini.
Ingredients:
  • 1.5 tablespoons olive oil
  • 1.5 tablespoons butter
  • 1 cup finely chopped white onion
  • 2 cloves garlic, finely chopped
  • 2.5 pounds zucchini, cubed
  • 1 medium russet potato, peeled and cubed
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 (32 fluid ounce) container chicken stock
  • 0.5 cup heavy cream
  • 1 teaspoon chopped fresh dill, or to taste
Instructions:
  • In a large saucepan over medium heat, warm up oil and butter. Sauté onion and garlic until softened, about 6 to 8 minutes. Toss in zucchini, potato, salt, and pepper; cook until softened, about 8 to 10 minutes. Pour in stock and bring to a gentle simmer. Let it simmer for 15 minutes.
  • Pour half of the soup into the blender, cover, use a potholder to hold the lid down, pulse a few times, then blend until smooth. Transfer to another saucepan. Repeat with the remaining soup.
  • Combine cream into the soup and simmer gently until heated through. Serve in bowls and sprinkle with fresh dill for a delightful finish.
