French onion mac and cheese: A comforting twist on a classic, rich and savory, perfect as a main or side dish.
Ingredients:
  • 6 tablespoons butter, divided
  • 2 large sweet onions, thinly sliced
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon kosher salt, divided
  • 1 teaspoon ground black pepper, divided
  • 1 (12 ounce) package elbow macaroni
  • 0.25 cup all-purpose flour
  • 2.5 cups whole milk
  • 2 cups shredded white Cheddar cheese, divided
  • 2 cups shredded Swiss cheese, divided
  • 0.25 French baguette, cut into 1/2-inch slices
Instructions:
  • In a large skillet over medium heat, melt 2 tablespoons of butter with olive oil. Add onions and sauté, stirring constantly, for 1 minute. Then, lower the heat to medium-low and continue cooking, stirring occasionally, until onions are golden brown, about 40 minutes.
  • Add a handful of fresh thyme leaves, a splash of Worcestershire sauce, and a drizzle of sherry. Allow the liquid to reduce for about 3 minutes. Season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Take the onions out of the pan and keep them aside. Keep the skillet for later use.
  • Bring a large pot of salted water to a boil. Cook pasta until tender, about 6 minutes. Drain and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C) and generously butter a 9x13-inch or 3-quart baking dish.
  • Heat the reserved skillet over medium heat, then add the remaining butter. Once the butter has melted, stir in the flour and cook for 2 minutes, stirring often. Pour in the milk and bring to a simmer while stirring frequently. Season with the remaining salt and pepper and continue to cook for 5 minutes, stirring often. Finally, add 1 1/2 cups Cheddar and 1 cup Swiss cheese, and take the skillet off the heat.
  • Combine the set-aside onions and pasta, then transfer the mixture to the buttered baking dish. Rip bread slices in half and lay them over the pasta. Finally, sprinkle with the rest of the cheeses.
  • Bake until golden and bubbly in the preheated oven for roughly 25 minutes.
