Delicious summer corn salad perfect for BBQs, flavors enhance over time.
Ingredients:
  • 4 ears fresh corn, shucked and desilked
  • 1 cup sliced English cucumber
  • 12 medium cherry tomatoes, halved
  • 0.25 cup olive oil
  • 2 tablespoons diced red onion
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Get your outdoor grill ready by preheating it to a sizzling medium-high temperature.
  • Grill the corn for 15 minutes, rotating occasionally for even cooking. Then, transfer to a cutting board to cool for 5 minutes.
  • Cut fresh corn kernels from the cob and transfer them to a spacious bowl. Mix in diced cucumber, halved cherry tomatoes, chopped cilantro, high-quality olive oil, finely chopped red onion, freshly squeezed lime juice, ground cumin, garlic powder, salt, and freshly ground black pepper. Stir everything together until well combined.
  • Chill in the refrigerator for a minimum of 1 hour prior to serving.
