Indulge in vegetarian-friendly homemade vanilla marshmallows made with agar agar powder for a soft, fluffy treat without gelatin.
Ingredients:
  • cooking spray
  • 1 cup confectioners' sugar, divided
  • 1.25 cups water, divided
  • 2 tablespoons agar agar powder
  • 2 egg whites
  • 1 tablespoon light corn syrup
  • 1.5 teaspoons vanilla extract
Instructions:
  • Coat a 9-inch square baking dish with a light layer of cooking spray, then generously sprinkle with 1/2 cup of confectioners' sugar.
  • In a small saucepan, bring 1/2 cup of water to a gentle boil. Remove from heat and whisk in agar agar, allowing it to soak and dissolve for 10 to 15 minutes.
  • Whisk egg whites in a stand mixer with the whisk attachment until soft peaks form.
  • In a small saucepan, bring together 3/4 cup of water, white sugar, and corn syrup. Heat on medium-high until the mixture reaches 250 to 265 degrees F (121 to 129 degrees C) on a candy thermometer or forms a rigid ball when dropped into cold water. Take the saucepan off the heat and stir in the agar agar mixture.
  • Gradually add hot syrup to beaten egg whites in stand mixer while continuing to beat until stiff peaks form. Mix in vanilla extract.
  • Evenly spread the marshmallow mixture in the prepared pan, then sprinkle with the remaining 1/2 cup of confectioner's sugar. Allow it to set for 8 hours to overnight.
  • Run a sharp knife under hot water, then cut the marshmallow mixture into 2-inch pieces.
