Moist nutty zucchini-carrot bread with applesauce and egg whites.
Ingredients:
  • 1.5 cups whole wheat flour
  • 0.25 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 6 egg whites
  • 0.5 cup unsweetened applesauce
  • 1.5 cups brown sugar
  • 1 cup grated unpeeled zucchini
  • 1 cup grated carrot
  • 0.5 cup raisins
  • 0.5 cup chopped pecans
Instructions:
  • 1. Preheat your oven to 325 degrees F (165 degrees C) and generously grease a 9x5 inch loaf pan with non-stick spray. 2. In a large bowl, combine all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Sift together until thoroughly mixed.
  • Using a mixer, whip egg whites until fluffy. Combine applesauce, brown sugar, zucchini, carrots, and vanilla. Add raisins and pecans. Gently fold in the flour mixture until just combined. Pour batter into pan.
  • Bake for 1 hour 20 minutes or until a toothpick inserted in the center comes out clean. Let the bread cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
