Irresistible corn casserole loaded with whole kernel corn, creamed corn, and cornbread stuffing for a never-fail crowd pleaser.
Ingredients:
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 teaspoon minced garlic
  • 1 (15 ounce) can creamed corn
  • 1 cup sour cream
  • 1 (6 ounce) package cornbread stuffing mix
  • 4 ounces mild Cheddar cheese, grated
  • 0.33333334326744 cup mayonnaise
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • In a medium heat frying pan, melt butter and stir in onion. Saute for 2 minutes. Add garlic and continue sauteing for another 2 minutes. Remove from heat.
  • Combine whole kernel corn, creamed corn, sour cream, stuffing mix, half the Cheddar cheese, mayonnaise, salt, and pepper in a large bowl. Stir in sauteed onions and garlic. Transfer mixture to the casserole dish and sprinkle the rest of the Cheddar cheese on top.
  • Bake in the oven until stuffing is perfectly fluffy, for 35-40 minutes.
