"Delicious slow cooker potato soup with bacon and cheese for a creamy, flavorful twist."
Ingredients:
  • 3 slices bacon, cooked and crumbled
  • 4 red potatoes, peeled and cut into 1/2 inch chunks
  • 0.25 cup butter
  • 0.5 onion, chopped
  • 3 cloves garlic, coarsely chopped
  • 0.25 cup all-purpose flour
  • 3 cups milk
  • 1 cup sour cream
  • 0.25 cup shredded Cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons seasoned salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon crushed red pepper flakes
  • 0.5 teaspoon celery salt
  • 0.5 teaspoon dried basil
  • 1 tablespoon chives for garnish
Instructions:
  • Turn the large slow cooker to High and cover it with the lid to preheat.
  • Microwave the diced potatoes in a microwave-safe bowl on High for 8 minutes until tender and piping hot.
  • While the potatoes are cooking, add the butter to the preheated slow cooker. Sauté the onions and garlic for 5 minutes until golden. Pour in 1/2 cup of milk, whisk in the flour until smooth. Slowly whisk in the remaining 3 cups of milk and bring to a simmer. Cook for 10 minutes until the soup thickens.
  • Combine the hot cooked potatoes, crumbled bacon, sour cream, Cheddar cheese, Parmesan cheese, seasoned salt, parsley, red pepper flakes, celery salt, and dried basil in the slow cooker. Mix well, switch to Low setting, cover, and cook for 3 hours, giving it a stir every now and then. Garnish with chives and enjoy!
