Panasonic CIO-baked pork chops with creamy mushroom sauce over rice - a delectable weeknight meal.
Ingredients:
  • 2 cups water
  • 1 cup white jasmine rice
  • 1 tablespoon butter
  • 4 (1/2-inch thick) pork chops
  • 1 tablespoon olive oil, or to taste
  • 0.5 teaspoon Creole seasoning, or to taste
  • 1 green bell pepper, sliced
  • 0.5 small onion, sliced
  • 0.25 cup butter
  • 0.5 cup sliced fresh mushrooms
  • 0.25 cup chopped onion
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 0.5 teaspoon ground paprika, or to taste
Instructions:
  • In a saucepan, bring water, rice, and 1/2 teaspoon of salt to a boil. Simmer covered on low heat for about 20 minutes until the rice is tender. Take it off the heat and stir in 1 tablespoon of butter until the rice is fluffy.
  • Preheat oven to 350 degrees F (175 degrees C), or use the "Combo 1" setting for countertop induction ovens.
  • In a 9-inch baking pan, lay the pork chops flat, then generously drizzle with olive oil. Season both sides with Creole seasoning, salt, and pepper. Arrange green bell pepper and onion slices over and around the pork chops.
  • Cook until an instant-read thermometer inserted into the center registers at least 145 degrees F (63 degrees C), for around 20 minutes in a traditional oven or 10-15 minutes in a countertop induction oven. Shield with aluminum foil.
  • In a large skillet over medium heat, melt 1/4 cup of butter. Add mushrooms and chopped onion, cook and stir until the onion is translucent, about 5 minutes. Pour in half-and-half, then slowly stir in flour. Cook and stir until the sauce thickens, about 5 minutes.
  • Drizzle sauce over pork chops and gently mix to combine with pan drippings.
  • Place the pork chops back in the oven and bake for 3 to 5 minutes to blend the flavors. Serve over rice and garnish with a sprinkle of paprika.
