Summer beet soup with tangy buttermilk is served with rye or pumpernickel bread for a complete Russian-inspired meal.
Ingredients:
4cups fat-free buttermilk
1cucumber - peeled, seeded, quartered lengthwise and diced
1 (15 ounce) canslicedbeets with liquid
2tablespoons choppedfresh dill
0.5 teaspoonsalt, or to taste
2tablespoons white vinegar, or to taste
Instructions:
Combine the buttermilk, cucumber, beets with juice, green onions, dill, salt, and vinegar in a bowl. Mix well and refrigerate covered for at least 2 hours, or overnight for optimal flavor. Serve chilled.
