Iconic Italian Bellini: Juicy peaches and bubbly Prosecco blend beautifully.
Ingredients:
  • 2 ripe peaches flat ones if you can get them
  • 750 ml Prosecco chilled
Instructions:
  • Prepare the peaches by halving them, removing the stones, then blending them in a liquidizer until smooth. If needed, add a splash of water. Alternatively, hand-squeeze and push the peaches through a sieve for a rustic texture. Discard any leftover solids. Combine the peach puree with Prosecco in a jug and gently mix. Pour the mixture into six glasses and top up with more Prosecco as desired before serving. Enjoy the refreshing Peach Bellinis!
