No-Bake Mango Cheesecake

Easy no-bake mango cheesecake with creamy mango filling, topped with gelatin, chilled for a delightful dessert.
Ingredients:
  • 20 tea biscuits (such as Marie Biscuits), or more as needed
  • 0.33333334326744 cup butter
  • 0.5 teaspoon ground allspice
  • 1 (8 ounce) package cream cheese, softened
  • 0.75 cup heavy whipping cream
  • 0.5 cup brown sugar
  • 0.5 cup hot water
  • 1 tablespoon unflavored gelatin
  • 1 cup mango puree
Instructions:
  • Prepare the springform pan by lining it with foil. Crush cookies in a food processor until fine; mix in melted butter and allspice. Press the crumb mixture evenly onto the bottom of the pan. Chill in the freezer until firm, approximately 1 hour.
  • Combine cream cheese, heavy cream, and brown sugar in a large bowl and mix with an electric mixer until smooth.
  • Combine hot water and gelatin in a small bowl, stirring until fully dissolved. Mix in mango puree. Add 1/2 cup of the mixture to the cream cheese mixture and beat until fully combined. Pour over the cookie layer, cover with plastic wrap, and freeze until nearly firm, approximately 1 hour.
  • Drizzle the remaining 1/2 cup of the mango mixture over the cream cheese layer. Cover with plastic wrap and freeze for about 3 hours until set. Refrigerate for 2 hours or preferably overnight.
