Indulgent and gooey, a taste of ultimate Italian comfort.
Ingredients:
  • 1 x Semolina teardrop dumplings
  • 150 g fontina cheese
  • whole milk
  • 1 large free-range egg
  • 1 whole nutmeg for grating
Instructions:
  • Prepare the cheese mixture by grating it into a heatproof bowl along with a splash of milk. Add the egg yolk to the bowl and place it over gently simmering water. Melt the mixture slowly for 4 to 5 minutes until it reaches a silky, custard-like consistency. Whisk occasionally, adding more milk if necessary. Season with black pepper and nutmeg. Toss with the dumplings and a splash of cooking water to desired consistency.
