Spicy noodle dish with zesty radish and fresh mint salad.
Ingredients:
  • 2 x 80g pkts Mi Goreng Original noodles
  • 6 eggs, lightly whisked
  • 62.50 ml chopped fresh coriander
  • 9.20 gm canola oil
  • 1 bunch asparagus, peeled into ribbons
  • 1 avocado, peeled, chopped
  • 2 radishes, cut into matchsticks
  • 250.00 ml fresh mint leaves
  • 80ml (1/3 cup) Chang’s Oriental Fried Noodle Salad Dressing
Instructions:
  • Prepare the noodles according to the package instructions. Then, transfer them to a bowl and mix in the seasoning packets from the noodles, setting aside the fried shallots. Add the eggs and coriander, tossing everything together until fully incorporated.
  • Preheat the grill to high. Heat oil in a 20cm non-stick ovenproof frying pan over medium-high heat. Pour in the egg mixture and cook over low heat for 10 minutes until almost set. Finish by placing the pan under the grill for 5 minutes until fully set.
  • Combine the fresh asparagus, creamy avocado, crisp radish, fragrant mint, and crunchy fried shallots in a bowl.
  • Place the noodle cake onto a plate, then serve alongside the salad and drizzle with dressing.
