Creamy seashell pasta salad with hard-boiled eggs, crispy bacon, Cheddar cheese, vibrant veggies - ideal for gatherings.
Ingredients:
  • 1 (16 ounce) package seashell pasta
  • 8 slices bacon
  • 1 cup creamy salad dressing (such as Miracle Whip®)
  • 0.25 cup white wine vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 red onion, finely diced
  • 1 (8 ounce) can sliced water chestnuts, rinsed and drained
  • 4 hard-cooked eggs, chopped
  • 0.5 green bell pepper, diced
  • 0.5 red bell pepper, diced
  • 2 stalks celery, diced
  • 0.5 cup sliced black olives
  • 0.5 cup diced sharp Cheddar cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Boil a pot of salted water, then cook shell pasta for about 8 minutes until al dente. Drain and rinse with cold water.
  • In a large skillet, cook the bacon over medium-high heat, turning occasionally, until evenly browned for about 10 minutes. Drain the bacon on paper towels and crumble.
  • Combine creamy salad dressing, vinegar, Worcestershire sauce, olive oil, garlic, Dijon mustard, and oregano in a bowl and whisk until creamy and well mixed.
  • Combine pasta, crispy bacon, flavorful red onion, crunchy water chestnuts, eggs, fresh green bell pepper, vibrant red bell pepper, crisp celery, savory olives, sharp Cheddar cheese, and rich Parmesan cheese in a large bowl. Drizzle with dressing and toss gently to ensure every ingredient is coated. Refrigerate for a minimum of 1 hour to allow flavors to meld before serving.
