Nut-free coriander and chilli pesto

Nut and gluten-free coriander-chilli pesto for vibrant pasta dishes or zesty fish topping.
Ingredients:
  • 24.00 gm sesame seeds
  • 40.00 ml pepitas
  • 250.00 ml firmly packed fresh coriander leaves
  • 1 garlic clove, peeled, quartered
  • 1 red chilli, roughly chopped
  • 10.60 gm lemon juice
  • 115.00 gm vegetable oil
Instructions:
  • Toast sesame seeds and pepitas in a frying pan over medium heat, stirring occasionally, for 2 to 3 minutes until golden. Remove from heat and let cool completely.
  • Combine seed mixture, coriander, garlic, chili, and lemon juice in a small food processor. Blend until nearly smooth. While blending, slowly pour in oil until well combined. Season with salt and pepper to taste.
