Nutella cheesecakes with salted toffee pretzels

Decadent Nutella cheesecakes with chocolate ganache and salted toffee pretzels.
Ingredients:
  • 120g plain chocolate biscuits
  • 75g pretzels
  • 100g butter, melted
  • 2 x 250g pkt cream cheese, at room temperature
  • 300g ctn sour cream
  • 100g (1/2 cup) caster sugar
  • 150g (1/2 cup) Nutella
  • 180g dark chocolate, melted, cooled
  • 2 eggs
  • Toffee pretzel shards, to decorate (see notes)
  • Toffee crumbs, to decorate (see notes)
  • 180g dark chocolate, finely chopped
  • 60ml (1/4 cup) pouring cream
Instructions:
  • Preheat oven to 160C/140C fan forced. Remove the bases from six 10cm springform pans and flip them over. Cover each base with a sheet of baking paper, leaving a 4cm overhang. Secure the base with the paper facing up back into the pan. Repeat for the rest of the pans.
  • Combine the biscuits and pretzels in a food processor and blend until finely crushed. Add the butter and mix until fully incorporated. Divide the mixture among the pans. Press the biscuit mixture firmly onto the base of each pan using the back of a spoon. Chill in the fridge for 20 minutes.
  • Combine cream cheese, sour cream, and sugar in a clean food processor, blend until smooth. Blend in Nutella and chocolate until well combined, then add the eggs and blend until fully incorporated.
  • Distribute the creamy cheese mixture into the pans. Set the pans on a baking tray and bake for 30 minutes until the center sets. Turn off the oven and cool with the door slightly open to prevent cracking. Chill in the fridge for 4 hours before serving.
  • To make the luscious chocolate ganache, combine the chocolate and cream in a microwave-safe bowl. Heat on High, stirring every minute, until the mixture is melted and silky smooth.
  • Take the cheesecakes out of the pans. Spread the ganache over each cheesecake and let it set for 10 minutes. Add the toffee pretzel shards on top of the cheesecakes and sprinkle with crushed toffee crumbs for decoration.
