Transport yourself to the Mediterranean in just 15 minutes with zesty lemon, refreshing mint, and creamy tzatziki.
Ingredients:
  • 190g (1 cup) couscous
  • 2 zucchini, ends trimmed, thinly sliced
  • 3 tsp finely grated lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • 250ml (1 cup) boiling water
  • 18.20 gm olive oil
  • 1 x 420g can Chickpeas, drained, rinsed
  • 125.00 ml fresh coriander leaves
  • 62.50 ml fresh mint leaves, coarsely chopped
  • 1 x 175g pkt smoked ocean trout, flaked
  • 125g (1/2 cup) bought tzatziki
Instructions:
  • In a large heatproof bowl, mix together couscous, zucchini, lemon rind, and 1 tablespoon of lemon juice. Pour in water and oil, then cover and let sit for 4 minutes until all liquid is absorbed. Fluff up the grains with a fork before serving.
  • Gently fold in chickpeas, fragrant coriander, fresh mint, and delicate ocean trout. Season generously with salt and pepper to enhance the flavors.
  • Serve in individual bowls and garnish each with a spoonful of tzatziki before serving.
