Ocean trout on radish, apple and cucumber salad

Delight with ocean trout, green bean bundles, and crispy roast potatoes for a comforting main course.
Ingredients:
  • Olive oil spray
  • 2 (about 200g each) ocean trout fillets
  • 1/2 green apple, cored, cut into matchsticks
  • 1/2 small Lebanese cucumber, halved, seeded, cut into matchsticks
  • 3 radishes, trimmed, cut into matchsticks
  • 20.00 ml white balsamic vinegar
  • 2.95 gm Dijon mustard (see note)
  • Pinch of sugar
  • 20.00 ml fresh chives, cut in 5cm lengths
  • Lime wedges, to serve
Instructions:
  • Preheat the oven to 180°C and lightly coat a baking tray with oil spray.
  • Preheat a medium frying pan over medium heat and lightly coat with oil spray. Season trout with salt and pepper, then pan-fry until golden, about 2-3 minutes per side. Transfer to a baking tray and bake for 5 minutes, until just cooked through.
  • Combine apple, cucumber, and radish in a bowl. In a small jug, mix oil, vinegar, mustard, and sugar. Season with salt and pepper. Toss apple mixture with dressing and chives until coated.
  • Transfer the apple mixture onto individual serving plates, then elegantly place the trout on top. Serve with fresh lime wedges on the side.
